Dinner 1 – Peri Peri Chicken and Potato Bake
- 12 chicken drumsticks with the skin
- red onions
- potatoes
- 2 lemons
- olive oil
- garlic
- ginger paste
Add the juice of two lemons in a mixing bowl. Add three tablespoons of olive oil. Add a tablespoon of garlic and ginger paste. Add in the chicken, mix and allow the chicken drumsticks to soak for about 30 minutes. Cut the veg into large wedges. Once chopped, add to a large mixing bowl and season. Pop the veg and chicken drum sticks into separate freezer bags and freeze. Once you need them, take them from the freezer bags and layer the chicken drum sticks over the potatoes and onion. Put into the oven until cooked.
Dinner 2 – Mexican Lasagne
- 500g boneless chicken thighs
- olive oil
- 1 Onion (chopped)
- Garlic
- Ginger paste
- Paprika
- Coriander Powder
- Cumin powder
- Cayenne pepper
- Sweetcorn
- Passata
- sour cream
- Cheddar cheese
- Tortilla wraps
Cook the chicken and onion add in some garlic and ginger paste. Then add the spices and stir it. Add some sweetcorn and the passata. In a small bowl add sour cream and cheddar. Layer the lasagne mix in a circular tin with the tortilla wraps and a layer of cheese. Then add the sour cream and cheddar mix on top. Add more cheese on top. Freeze. Put straight in oven when you want to eat it.
Dinner 3 – Kebab and Mediterranean Veg Bake
- 650g lamb mince
- 1 egg
- 1 onion finely chopped
- garlic
- ginger paste
- spices
- lemon juice
- gram flour
- tomato puree
- Aubergine
- Peppers
- Courgette
Add the lamb mince, egg and onion in a bowl. Add the spices, lemon juice, gram flour and tomato puree and mix. Shape into round kebabs and then freeze them. Prep the veg put it into a freezer bag. When you want to eat it, layer the veg at the bottom of a pan, then put a layer of the kebabs over the veg and then add tomatoes and spring onion. Bake it the over.
