How to Make Fabulous Kahk (Eid Cookies) – Watch

It's Time to Feast!

Eid al-fitr is the feast that marks the end of Ramadan.  Because after a month-long of fasting, we’re going to be feasting 🙂

Eid al-Fitr celebrations last for 3 days, and it’s a time when people exchange gifts, wear new clothes and visit family and friends.

In many Muslim countries, Eid is never complete without Kahk (also called Maamoul), the lightly spiced crumbly cookie stuffed with sweet surprises and buried under copious amounts of powdered sugar.

Here, we bring you the recipe and we hope you’ll enjoy every bite 🙂

Eid Mubarak!

 

Dough ingredients:
0.5 kg coarse semolina
0.5 kg fine semolina
2 tbs granulated sugar
¼ teaspoon mahlab powder (can be substituted by anise powder or cardamom powder)
½ cup gee
250g unsalted butter
¼ cup orange blossom water
¼ cup rose water
1 tsp instant yeast
¼ cup warm water
Milk if needed (add milk and mix it well if your dough becomes dry, milk holds the dry semolina together and helps in shaping the cookies inside the mold)

Fillings ingredients:
Dates Maamoul:
0.5 kg dates paste
1 tbs vegetable oil

Pistachios Maamoul or 
walnuts Maamoul:
150g crushed pistachios/ or
crushed walnuts
4 tbs powder sugar
2 tbs orange blossom water
1 tsp cinnamon powder (for walnuts)
